Tony Capone, Co-Owner
Tony Capone Jr. brings to Marciano’s over 40 years of experience in the restaurant business in Chicago. Capone is the Co-owner and President of Cee Bee Cartage Inc. which has been providing independent transportation services to Chicago’s produce trade for over 55 years.
Chef Toumadi, Co-Owner
Chef Toumadi is known for both his passion for food and his innovative zest for life. In fact, he brought traditional Italian cuisine to the United States in 1998. The Corleone Sicily native brings to Marciano's over 25 years as a chef developing his own recipes and menus. Chef Toumadi worked for the Embassy of Kuwait, developing menus and cooking for private parties for diplomats, state departments, secret service, and capital police in Washington D.C. Toumadi has also served as chef at five-star restaurants across the country, including Positano Ristorante in Bethesda, Maryland. As a sought-after celebrity chef, Chef Toumadi has privately cooked for such names as Tim Russert (Meet the Press) and Jim Vance (NBC) - just to name a few. Chef Toumadi has been featured by a variety of national media, including the Washington Post, New York Times Magazine, and NPR News.
Kirsten Fitzpatrick, Co-Owner
Kirsten Fitzpatrick brings to Marciano's over 20 years in the culinary field serving in Executive & Master/Sous Chef positions for a variety of upscale catering and hotel organizations, cooking for events such as The Emmy Awards, The Tony Awards, and private corporate events for companies such as Cartier, Versace, and Calvin Klein. Fitzpatrick also served as Executive Sous Chef for Paul Newman and Lou Adler's The Painted Turtle, working directly with medical personnel to develop and prepare menus and meals for guests with very severe illnesses and allergies. Working for the Kroger Corporation, Fitzpatrick successfully opened over 30 delis & bakeries in the So Cal region for the major supermarket chain.
